Pai Gow Poker is played by comparing a seven card poker hand to the Dealer's seven card hand. Both you and the Dealer separate your seven card hands into a hand of five cards and a hand of two cards. You have the choice of how to divide up the hand, whereas the Dealer has to follow a prescribed set of rules. Once you divide up your hand, your five card hand is compared to the Dealer's five card hand, and your two card hand is compared to the Dealer's two card hand. In order to win your bet, both your hands must have a higher rank than the Dealer's comparable hands.
